Easy salmon and veggie one pot casserole recipe

Another hearty meal for a cool evening, with the benefit of being gluten-free. Vegetarians can simply leave out the salmon.

Serves two to three.


  • 1 medium sweetpotato, cubed into 2cm chunks
  • 2 carrots, cubed into 2cm chunks
  • 5 large button mushrooms, quartered
  • 1 clove garlic
  • 2 handfuls frozen peas (not thawed)
  • 125g tin corn (including the liquid)
  • 105g tin pink salmon (including the liquid)
  • rice bran oil (or olive oil)
  • 1 tbsp cornflour (or plain flour)
  • 2 tsp crushed ginger (from a jar)
  • 3 tsp ground cumin seeds
  • 1 tbsp tamari (Japanese gluten-free soy sauce)
  • half a cup hot water


Preheat the oven to 180ºC.

Put a medium sized Pyrex casserole dish on the small burner of your stove. Add a tablespoon of oil and saute the mushrooms for about 4 minutes. Add the garlic and another splash of oil, continue cooking until the mushrooms are cooked down (don’t overcook though). Take of the heat.

Add the sweetpotato, carrots, peas, salmon and its liquid and the corn and its liquid and mix together. Sprinkle the flour over the top and stir through.

In a measuring jug mix together the ginger, cumin and tamari, add the hot water and stir. Pour over the vegetables and stir through.

Add the lid, put into the oven and cook for half an hour. Remove and give it a stir. Put the lid back on and return to the oven for another half an hour.

Tasty served with rice.

NB Adding salt is not necessary as it is contained in the tinned corn, tinned salmon and tamari. I was surprised to see they also add sugar to the tinned corn.
